Abstract
As food borne pathogens continue to wreak havoc across the globe, the need to develop rapid, accurate and highly sensitive detection techniques has become of paramount importance. Conventional techniques for pathogen detection are limited by the time they consume, low sensitivity and need for long enrichment procedures. Biological sensors have emerged as a potential set of techniques to counter the problems faced in conventional detection methods. In this book chapter, various classes of biosensors such as electrochemical, potentiometric, impedimetric, voltametric, magnetoelastic and optical biosensors have been discussed along with their working principles and their emerging applications in detection of food borne pathogens.
